During our little Shane’s graduation, we celebrated with a dinner at Mangan Restaurant Bacolod with kapampangan cuisine. And we loved it!
While Bacolod is slowly inching its way to carve a reputation as a foodie destination, Pampanga is already wearing that badge. It is known as the culinary capital of the Philippines.
However it is the appetite of Bacolodnons that welcomes and enjoys all kinds of gastronomic treats from all over.
Kapampangan Cuisine at Mangan Restaurant Bacolod
A restaurant serving Kapampangan cuisine opened just recently at Ayala Malls Capitol Central.
Mangan Restaurant Bacolod recently opened and Bacolodnons have taken a liking to their food. Literally, “Mangan” means “eat” in Kapampangan. And indeed, they are serving appetizing dishes that will let you cave in to invitation, “Kain tayo.”
They are out to satisfy the Bacolodnon sense of adventure for flavors. I have yet to try all their other dishes, but I have no disappointments whatsoever with the ones i have tried so far.
My Personal Favorites at Mangan Restaurant
From sisig, laing, and crispy pata that are already their bestsellers as well as their reinvented dessert like buko pandan — I love them all.
Their leche flan is to die for. It is a treat to try these dishes in their original and perfected version.
The Bacolod Palate
I have observed that it is hard to win over the Bacolod palate. Some restaurants are even intimidated that they might not be able to please the local crowd.
That is because Bacolodnons also have a rich and sophisticated palate. We have our own flavorful original dishes that we can enjoy even almost everyday like the Bacolod Chicken Inasal and Cansi.
However, I realized that there are certain dishes that we thought are originally ours but are actually versions of the Kapampangan originals. And these versions are just modified to our preference. The sisig, bopis, and are originally from that province.
They are just so good that we have encountered inspired versions in other places of the Philippines. But I still enjoy its original version.
